This is my son's recipe and it is a dandy one!
We always double the recipe for it seems that one is just not quite enough
for these folks who love the recipe.
2 cups shredded extra-sharp Cheddar cheese
8 ounces cream cheese, softened
1/2 cup mayonnaise
1/4 teaspoon garlic powder
1/4 teaspoon onion powder
1 - 4 ounce jar of diced pimento, drained
ground pepper to taste
salt to taste
Place the cheddar cheese, cream cheese. mayonnaise, garlic powder, onion powder and pimento in a large bowl. Stir until completely combined.
Refrigerate for about an hour.
Place 1/2 - 3/4 cup of pepper jelly into a small bowl.
Mold the cheese into a ring around the bowl used for the pepper jelly.
Sprinkle the cheese mold with chopped pecans or walnuts.
Any leftover pimento can be used for sandwiches.
